I LOVE Italian Food! And I love pasta (but my body doesn't) so I try new recipes with brown rice pasta, Miracle noodles and other gluten free noodles that my family loves. Eating healthy doesn't have to be boring, you just have to know how to put things together so that the finished product tastes delicious and your body appreciates you taking care of it! Sustainable living is easy once you have the tools.
I love this dish because it can be prepared in these than 30 minutes and all the ingredients are pre-prepped and available at Trader Joe's. For instance, the fire roasted red peppers are already deseeded and deskinned, which shaves massive amounts of time meal prepping. And again, another one pan dish (minus the pot to boil the pasta.)
